HOT

I have only been eating HOT food's lately. I am not ready for winter! It was such an unwelcomed surprise for my body. I have been freeeezing ever since the temp went below 30!!  Yesterday for lunch I had a grilled cheese (on the sandwich maker) and tomato soup!



Later in the afternoon my mom and I went to the mall! We needed to return some less than stellar black friday buys, and I needed new jeans.  Ever since I gained weight, I never bought new jeans! I just made the most out of what I had.. (when I lost weight I never really bought new jeans then either) but I was in desperate need of better fitting jeans. And I found them!! They fit awesome, and it makes me feel so much better :) We ate in the food court..
Have you ever tried subway's flatbread sandwiches?! They are SOO good.


I got it toasted with turkey, cheese, lettuce and green peppers!


and I ate half of my mom's steak fries! (sooo good....)

I've just been relaxing today nothing much to do.. and its nice to have time to yourself! I am running to Plato's closet with a friend later to sell my old jeans. I hope you ladies have a fabulous day!

Christmas Vacation.

If only... I've got two more weeks, and then I AM DONE! I cannot wait. I just have to get finished with papers, tests, and finals. Breathe in, Breathe out.  I was super busy last night. I had 2 tests to study for, and a paper to write! I am sorry for being AWOL.  I have been eating well though, of course.  Intense studying calls for amazing snacks to keep me sane!!!
Yesterday morning I started with something different ( I know, no oatmeal) In the cold/winter I always crave hot foods.. so cereal doesn't cut it.

Cottage Cheese w/ Jewel brand Honey Wheat pretzels!

When it gets cold outside, I CRAVE mac and cheese! Last night I had a mad craving for some.. but we had NOTHING not even a kraft box!!! so I created my own!


2 oz pasta shape of choice (i chose spiral.. my fav.)
2 LC cheese wedges
1/8 cup of milk.

Easiest and healthiest mac and cheese of my life!
Basically you cook the noodles. While the noodles are cooking, mush up the 2 wedges in a microwave safe bowl.. add the milk to the mixture, stir a little and micro for 30 secs. (you might hear popping, that's normal) and voila! you have a cheese sauce.  After the pasta is cooked and drained, add the sauce to the noodles and there's your dinner!

I used the regular LC not the light.  If you use the light you might have to microwave longer, because its harder to melt cheese with less fat!!!!
Another craving I have during cold weather is pancakes!!!!


I used Hungry Man wheat pancakes. I added cinnamon and DOUSED them in SF maple syrup! yummmmmm :) I love winter, it has the best food!

College Student!

So I am officially registered for COLLEGE classes next semester! I am currently in high school, but I am graduating this december (as some of you may already know..) Anyways, I started this morning with a nice, warm bowl of oats :)

1/2 cup oats, 1 cup water, spoonful of PB (mixed in, of course) and granola!!! I love the combo of crunchy/creamy!

I had a super long day today.. I had to go to this stupid "Freshman Orientation" which took ALL DAY. At least I got to choose my classes and get a free lunch.  I hate cafeteria food... it gives me the creeps. You don't know how long that stuff has been sitting out there, and if its expired or not! But anyways, I had a grilled cheese and smartfood popcorn! I came home, exhausted.. and had a little snack

That definitely didn't satisfy my hunger.. I had yogurt and crackers afterwards :)

I never post my dinners because I usually have a frozen dinner *gasp* I know...
The thing is, is that I don't have enough creativity to make my own meals! I usually have a Healthy Choice, Kashi, or Lean Cusine with an apple and milk... but I want some ideas!!!
What do you ladies make for a simple, easy, healthy dinner?! I eat pasta that I make, but thats about it :(

Super Quickk

Hey ladies!! I don't have much time for an update today, I have lotsss of homework! There is something I want to talk about! Last month I started "intuitive eating", you can read about it here.  I read the book in its entirety, and tried to apply everything at once. That was a little too much.. I've been doing pretty well, but I decided that baby steps are best.  This week I am working on Principal 1. (keep in mind, I am NOT using this program as a aid to weight loss, I want to maintain my weight, if not gain a little. I'm using it as an approach to a healthier relationship with food)  Before I met with a nutritionist, I was counting calories like CRAZY. While seeing the nutritionist she had me counting carb points and food groups.  Now I am at a healthy weight, and have been for a couple months now.  Im want to eat like a normal person.. not count carbs or ANYTHING (the nutritionist had me following guidelines on my own, but she told me to do whatever I pleased when comfortable.. as long as I didn't loose weight). I have been doing this for about 3 weeks, not counting anything.. just following my intuition.

In principal 1 it is "reject the diet mentality" although I was never on a "diet" I did have the mentality, I labeled foods as "good" and "bad" and used the nutritional information as a guide to my choices.  I have been working on this a great deal. If I want a cookie for my morning snack, well you know what? I'll have it.. because the body is an amazing thing.. it evens out over time if you cooperate with it.  I always measured all my food too. I used measuring cups, food scales.. etc. I got sick of it, I mean whats the point? and I have stopped all of it. except for oatmeal.

I don't measure my oatmeal to keep the "portion in check"  or anything like that.  I like my 1:2 ratio.. 1/2 oats, 1 cup water. It gives me the consistency I like, and its satisfying (for the body and mind)

Now my question for you is: is measuring my oatmeal a diet mentality? or a personal preference?


When you make a recipe, most of the time you follow the guidelines- so it turns out right.  By doing so, you are not following a diet, you are simply making a pleasurable product... thats how I see it with my oats.  If I put a little extra in, so what.. I just wont be as hungry later.

So whats your opinion..? Should I continue to measure my oatmeal.. or just let it be? I'd like some advice :)

CARBS!!

I love carbs... have I ever told you that?! Next to peanut butter and chocolate, carbs are my favorite thing!
I have a question for you.. What kind of bread do you use??? I don't use any "brand name" for a number of reasons.. 1) A lot of the time it is shipped across the country (bad for mother nature!) 2) icky preservatives to keep them fresh 3) at the local grocery store there aren't many organic bread brands.. and the ones that are available are often over 5 dollars. I get the fresh baked bread from Jewel!


They bake their bread every day, or every other day (I asked!) and they use all natural ingredients (which is good!) and its tasty too :)

Last night I had a very YELLOW dinner!



2 eggs scrambled (one on plate, the other on sammie.. with cheese) and an orange! Every week my family has "breakfast for dinner" I switch it up with omelettes, eggs and toast, and sammies!

I feel like I have been absent for sooo long.. I have tried so many new things.. so here's another review!

Reviewwww Time!
As I mentioned before, my local grocery store doesn't offer many organic brands.. and if they do they are EXPENSIVE! Bear naked granola (and other brands) go for about 5 dollars, and often last me only a couple weeks.  A month or so ago.. I bought a different granola! Quaker Oats offers a lot of "natural granola". I am not one to buy "low fat" things, so I bought this one..


Let me tell you one crazy thing about me.. I HATE coconut.. I cannot stand it! Weird right?! Now.. when I bought this granola.. I didn't look at the ingredient list. It has both coconut, and coconut oil. And guess what? I actually liked it! There is a subtle coconut flavor.. but not enough to turn me away! It is really sweet.. so it is perfect to be paired with greek yogurt.  When I use it with my sweetened yogurt.. I use less, but the crunch is still there! I give this a 8/10. I love the slivered almonds in it, I just wish it was a little less sweet
yumm. I had some today!

SNOWW!!

We had our first flurries here today! I used to LOVE snow. I am a snowboarder (although I don't go as much as I used to). But now that I have to drive in it, I don't like it as much! I am terrified of slipping off the road. I drive like a total grandma in the winter, but I don't care! haha.  I got off of work early today! it was a lovely present :)
Last night my mom and I watched a movie. I wanted a mix of salty+sweet...

popcorn and hot chocolate.  Other than peppermint bark, hot chocolate is my favorite winter food!!
This morning I had a lovely bowl of oatmeal. One of my favorite combos. I shall call this "Strawberry Crumble Oats"



1/2 cup Oats
1 TBSP PB (mixed in)
1 Kashi Strawberry Cereal bar (crummmmbled)

I basically live off of everything kashi... I eat their heart to heart, and honey sunshine cereals. I have their bars and crackers A LOT... and I LOVE their pizza.  Maybe I should buy some stocks?! hahahha jk



REVIEW!
I had a coupon for Nature Valley Nut Clusters.. and I decided to buy some!




They taste just like their peanut butter granola bars. I loved it! It was a little sweet, and salty. I loved the fact that they were in the little "clusters" because you could just grab one and pop it in your mouth! They were a perfect snack for work! a 9/10!

Well.. Im off to make some english muffin egg sammies, and relax the night away! have an awesome evening!!
